Overview
The basis for many asian pork roasts and braises the "pork collar" is lovely and lean.$12.50/kg
This 1.5kg portion will serve 4-6 adults.
My favourite easy "special dinner" way to serve pork neck fillet:
Ingredients:
•4 tablespoons Chinese rice wine or dry sherry
•4 tablespoons soy sauce
•4 tablespoons hoisin sauce (you can use 4tblspns plum sauce if you prefer)
•2 teaspoon sesame oil
•4 teaspoons grated ginger
•3 cloves garlic, pressed
•1.5kg Pork Neck Fillet
Preparation:
Combine all ingredients except pork. Add pork and marinate, covered and refrigerated, 2 hours or longer.
Preheat over to 200 degrees.
Drain pork, reserving marinade. Place on a rack over a roasting pan.
Roast for 1.5 - 2hours, basting regularly & turning pork occasionally.
Slice thickly to serve.
